The Experience

“You’ve never had esquites like this,” our guide grinned, spooning the steamy corn into a little cup right in front of Parque de las Palapas. The air was thick with the smell of lime and grilled meat from nearby stalls, and honestly, I was still figuring out how to balance my camera, my cup, and a squeeze of chili sauce. People were laughing around us—some families, a couple of old friends arguing about which salsa was best. It felt like we’d just wandered into someone’s backyard party instead of a downtown Cancun taco tour.

Somewhere between bites, we stopped for a mini tequila tasting. I didn’t expect to actually learn anything but our host explained the difference between blanco and reposado while we sipped slowly under string lights. There was this moment where everything just slowed down—the noise faded out except for the clink of glasses and someone’s kid chasing pigeons nearby.

Just when I thought I couldn’t eat another bite, out came fresh churros—hot enough to burn your fingers if you weren’t careful, dusted in sugar and dipped in caramel cajeta. Even now I can almost taste that last bite. We said goodbye to our guide back at the park, still sticky-fingered and smiling a little too much from all the food (and maybe the tequila).
