That conversation becomes your itinerary. You meet at your accommodation (if it's in Venice), and from there the guide shows you how to move through the city without the maze feeling like one.

If you want to step inside a museum or a church, the guide can arrange tickets in advance so you're not hunting for entry or standing in a line. Food and drink during breaks are on you, as is any local transportation if you want to take a vaporetto instead of walking a particular stretch.
