The Experience

You board a 10-seat boat at the quiet San Vito harbor — a small fishing village with free parking a 5-minute walk uphill from the dock. After a quick safety briefing, the skipper cruises under the Bourbon bridge for the postcard view of Polignano, then stops in front of Lama Monachile beach where Domenico Modugno's statue overlooks the cove. The skipper plays "Volare" as you take in the view where the famous song was born. It's the emotional centerpiece of the tour and the best photo moment.

The boat then moves slowly past Grotta Palazzese, the world-famous cave restaurant carved into an 18th-century cliff, where the skipper explains its history and you get as close as sea conditions allow for photos from the water. You pass Grotta Ardito with its tall vaulted ceiling and emerald reflections, then cruise along the dramatic coastline toward the Lovers' Cave. On sunny days around 1 PM, a beam of light enters through a hole in the ceiling and creates a heart-shaped reflection on the rock inside — a natural phenomenon the skipper watches for. You'll also see the Rock of the Hermit standing alone in the sea, with the local legend of a hermit who prayed for fishermen.

The skipper anchors in a secluded cove chosen for calm water and privacy that day, and you have 20 minutes to swim in crystal-clear water accessible only by boat. Snorkeling gear and floating mats are provided. Back on board, you get a traditional Puglian aperitif: chilled Prosecco DOC, artisanal taralli from a local bakery, fresh seasonal fruit, and soft drinks. Italian music plays while you relax, sunbathe, or take photos of Polignano's cliffs from the water.
