Your host is a Cesarina (a member of Italy's oldest network of home cooks), who teaches you the family recipes the way Italian nonnas have always prepared them at home. This is not a demonstration. You're the one kneading dough, layering cream and mascarpone, and getting your hands into the work. The class runs three hours, and everything you make becomes your meal, served with a selection of local wine.
