The Cihuatán Archaeological Site sits on 70 hectares of what was once a thriving post-classical Pipil city, and walking through it now—past the ball court, the temple mounds, the remains of a walled settlement—you're standing in a place that mattered between 900 and 1200 AD. More than 100 mounds are scattered across the site, each one a piece of a civilization that rose after the Maya collapse. After Cihuatán, you move on to the rum factory—and this is where the day shifts tone completely. The Cihuatán Rum Factory tour runs about two hours, and you learn how the spirit is made, where it comes from, what goes into the craft. There's a tasting at the end, which is the kind of thing that makes sense after you've spent the morning in the heat walking through ruins. The factory is still in the same region, so the drive isn't long.

Then Suchitoto. The town is 47 kilometers from San Salvador, and it's the kind of place where the colonial architecture actually stops you—cobblestone streets, old houses with wooden balconies, the light hitting the plaster in a way that makes you want to photograph it. Suchitlán Lake sits at the edge of town, and the views from certain corners are the reason people come back.
