The Experience
Sixty minutes and you're holding a warm chimney cake you shaped yourself. The workshop sits in central Prague, and you walk in, tie on an apron, and start with the dough — no baking experience needed. Your instructor talks through the history of trdelník while you knead, then shows you how to wrap it around the wooden spit the way it's been done for generations. The whole thing takes about an hour, and by the end you're standing at the oven watching yours turn golden.
The spit work is the part that sticks with you. You rotate it slowly, watching the dough cook evenly, and there's something satisfying about the rhythm of it — not rushed, not complicated, just the motion and the heat and the smell of baking dough. Once it's done, you choose your topping. Cinnamon sugar is the classic move, but walnuts and other options are there too.
