The experience
Four hours at the estancia starts with fried cakes and coffee while you hear the story of the pioneer families who built this place. Then you move into the working part of the ranch: you'll see the corrals and constructions, watch the shearing demonstration, and ride on horseback along the banks of the Calafate stream. The flora changes with the season, and the guide points out what grows there. A tasting of wine from Montañes and lamb confit comes before you move to a room where a projection honors the pioneer families.
Dinner is the final piece: grilled lamb, chorizo, blood sausage, garden salad and rustic potatoes, followed by homemade flan, chocolate mousse, bread pudding or apple crumble with ice cream. A folkloric show of typical Patagonian dances plays while you eat. The whole experience, including transport to and from your accommodation, is built around the rhythm of the ranch itself, not a schedule that rushes you through.
