The first thing I remember is the dust — that fine, orangey powder hanging in the air as we revved up the quad bikes just outside Albufeira. Our guide, Rui, handed me a helmet and grinned like he knew what was coming. The bikes were chunkier than I expected, 300cc engines rumbling under us. Sunlight bounced off the handlebars and someone in our group already looked nervous (honestly, me too). But then we took off, following Rui into the kind of countryside you never see from the highway — olive trees twisting out of rocky ground, wildflowers everywhere. I could smell thyme when we slowed down for a second.

We hit our first stream maybe twenty minutes in. Not deep — just enough to splash your boots if you weren’t careful.
