What’s the experience like?

It’s noisy the second we step out of the car — not in a bad way, just that Cairo kind of busy where everything feels alive. Our guide, Hossam, grins and waves us right into the thick of Khan el-Khalili market. I catch a whiff of cardamom and something sweet (maybe dates?) as we squeeze past stalls overflowing with copper lamps and scarves. He points out the mosque on our left — “oldest in this part of Cairo,” he says — and I have to admit, I barely hear him over the sound of someone bargaining for spices. It’s chaotic but somehow comforting.

We duck into a tiny shop where an old man is rolling tobacco for sheesha pipes. Hossam insists we try it — “just once!” — so I do, and nearly cough my lungs out while he laughs. The smoke tastes like apples and something floral. After that, we wander deeper into the bazaar for cotton shirts (100% Egyptian cotton, apparently), then stop at a papyrus place where they show us how ancient Egyptians made paper. The guy teaching us has hands stained with green dye and tells stories about pharaohs between steps. I still think about that moment sometimes when I see my name written in hieroglyphs on my fridge.

Lunch is koshary from a street stall — warm lentils, pasta, spicy tomato sauce — or falafel if you want something lighter. We eat sitting on low stools while Hossam chats with the cook about football scores. There’s something grounding about eating food like this, surrounded by the noise and color of Cairo life. On the way back to our hotel (private car, thankfully), I realize I never did figure out what half those spices were called… but maybe that’s not really the point.
